Recipe: Afternoon energy bars
Keep energized during the afternoon with this healthy mixture of brown rice cereal, rolled oats and almonds.
Ingredients
- 2 cups crispy brown rice puffed cereal
- 1 cup thick-cut rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup raw almonds
- 1/2 cup raw hemp seeds
- 1/2 cup goji berries
- 1/4 cup toasted sesame seeds
- 1/4 cup raw sunflower seeds
- 2 tbsp chia seeds
- 1/2 cup honey or maple syrup
- 1/2 cup almond butter
- 2 tbsp coconut oil
- 1 tsp cinnamon
Directions
1 Preheat the oven to 375°F.
2 In a large bowl, toss together the rice cereal, oats, shredded coconut, almonds, hemp seeds, goji berries, sesame, sunflower and chia seeds; set aside.
3 In a small saucepan over low heat, combine the honey, almond butter, coconut oil and cinnamon. Heat, stirring, until the honey and almond butter are melted.
4 Add the wet mixture to the dry ingredients and stir until well combined. Press the mixture into a 9" x 9" metal baking pan lined with parchment paper.
5 Bake for 15 to 18 minutes, until the mixture is just beginning to brown around the edges.
6 Remove from the oven and, when slightly cooled, carefully press the mixture down in the baking pan with a spatula to firmly bind the ingredients together.
7 Allow to cool completely before slicing into 18 bars with a serrated knife. Serve.
