Recipe: Fried green tomatoes with goat cheese
Meet the ultimate way to elevate your next burger.

Ingredients
- 3 large green tomatoes
- Flour, for dredging
- Salt and freshly ground black pepper
- 2 eggs
- 3/4 cup bread crumbs or panko
- 1/2 cup cornmeal
- Canola or peanut oil, for cooking
- 4 oz (about 1 cup) goat cheese
- 1/4 cup heavy cream
- 2 fresh basil leaves
Directions
1 Cut the tomatoes crosswise into 1/2"-thick slices. Place some flour in a shallow dish or pie plate and season with salt and pepper.
2 Crack the eggs into another shallow dish and stir with a fork. In a third dish, combine the bread crumbs and cornmeal.
3 Coat the bottom of a large, heavy skillet generously with oil and set over medium-high heat. While the oil is heating, coat each tomato slice by dipping it first in the flour, then in the beaten eggs and finally in the bread crumb mixture.
4 Fry until the slices are golden and crisp on both sides, transferring to a paper towel-lined plate as they’re done.
5 Combine the goat cheese, cream and basil leaves in the bowl of a food processor and pulse until smooth. (If you like, whip the goat cheese and cream first, then add the basil in a few pulses so it’s not as evenly blended.)
6 Alternatively, beat with an electric mixer, adding the basil at the end.
Serve the tomatoes warm, topped with a dollop of the whipped goat cheese.
